The BEST Ever Crispy & Chewy Oatmeal Cookies

Trust me, I'm not kidding when I say the best.



Over the summer, I made this Carrot Cake Oatmeal Cookie Brittle as result of my failure to recreate my favorite oatmeal cookies my friend's mom makes.
This morning, I woke up and had a major craving for those thin & crispy, but so, so chewy oatmeal cookies.


And that's exactly what I did first thing. I literally rolled out of bed, brushed my teeth, and went straight into the kitchen.


After a good 2 hours of baking batches of cookies, I finally came out with 12 (huge) cinnamon-sugary-buttered oatmeal cookies that were beyond good. Like really, really good.


As anyone who reads this blog knows, I can't bake. Most of my baked goods end up in the trash in a matter of minutes, or in the freezer for a couple of months, and then into the trash when I realize no one will ever eat them.
But these. These cookies were almost gone not even 2 hours after I pulled them out of the oven.


Please, if you do one thing before the winter break is over... MAKE THESE COOKIES.

And you shouldn't have any excuse to not make them, considering all you have to do it throw less than 10 basic ingredients in a bowl and mix.


Crispy Cinnamon Oatmeal Cookies

  • 2 cups oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. fine salt
  • 1 cup granulated sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 1 cup (2 sticks) melted butter
Pre-heat oven to 350º. 
Literally, mix all together in a bowl, roll into balls- should get 12 even sized ones to make big cookies, place on a parchment lined baking sheet, and bake for 15-20 minutes or until mostly flattened and golden brown on the outside edges. The middles will still be a little risen, and the cookies will run together. Let cool completely- another 15 minutes to finish cooking and flattening before devouring.
