Sunday Smoothie Bowls + Loaded Caribbean Shrimp Nachos

Yay for weekends!

What better way to celebrate the weekend than with Acai smoothie bowls topped with homemade granola & other yummy goodies, and a big plate of Caribbean shrimp nachos? Or the end of the weekend as I should say... 
Can you believe how close Summer is? This year has gone by so incredibly fast, I mean it's already MAY! I'll be laying by the pool, drinking ice-cold smoothies, and devouring refreshing summer meals in no time. Until then, we'll have to make it through just a couple more weeks of 6 AM wake-ups, 8 hour school days, and 1 AM bedtimes...

If any of your homes happen to be filled with those nasty Sunday blues, mine definitely is, try whipping up this tropical berry acai bowl for breakfast, or maybe tackle a plate of homemade caribbean nachos for lunch, or, if you're feeling extra down, try both... Can you tell I'm feeling tropical today?



Coconut Lime Acai Bowl

2 tbs. acai powder
1 frozen banana
3/4-1 cup frozen mixed berries (or berry of choice)
1/2-1 cup coconut water (depending on how thick you want it)
1/2 lime (juiced)

Blend until thickened and smooth. Top with unsweetened shredded coconut, homemade coconut cream pie granola, and chia seeds. You can also top it with more fresh berries, mango, or bananas, goji berries, cacao nibs, nuts, or nut butters- Get creative!

Feel free to add these super-foods into your smoothie for an extra boost:
spirulina
matcha powder
chia seeds/nuts
spinach/kale
cacao powder
maca
hemp seeds


And for lunch...



Caribbean Shrimp Nachos

Chips of choice- I recommend cutting yellow corn tortillas into 4, brushing wirh oilve oil, a pinch of salt & baking at 375 until crunchy! 
I didnt feel like making that today however because of how famished i was!! So i used nut cruckers instead and it worked well! I'd still use corn or flour tortillas in place any other day though.
1/2 lb. shrimp- steamed 
2 oz. grated parmesan
1/4 large red & yellow bell pepper- diced
salt, pepper, cumin, paprika, chili powder
olive oil
fresh cilantro
1/2 jalapeño- sliced thinly
3 tbs. mango salsa or 1/4 diced mango
1/2 avocado- cubed
fresh lime

Heat the oven on a broiler setting. 
Pat the shrimp dry, place in a bowl with bell peppers, garlic, onion, & jalapenos. Toss with spices. Lay on top of all the chips in a personal baking pan. Finish with parmesan & a drizzle of olive oil. Broil until cheese is melted & chips are toasty. Top with fresh avocado, mango/mango salsa, a squeeze of lime & cilantro. 

Sunday complete.
