The Most Amazing Time of the Year- AUTUMN

Today is September 23rd. Which means I'm in a very good mood, because today is the first day of fall! It's my favorite season of all, as it is for many others. There's just something about the season that gives me this amazing feeling every day when I wake up till the minute I fall asleep. It's not my favorite season because of the Christmas season or my birthday (November 21), well that may have something to do with it... Anyways, for some it means no more summery sunshine, pool days, and snow-cones, but for me it means the colors on the leaves are changing, I know... it sounds cheesy but it's the truth! In the summer every thing's just green and in the winter all the leaves or gone. But in fall, the leaves are gorgeous. It also means the first quarter of school is almost done, Halloween is coming up which happens to be one of my favorite holidays, mostly because I'm a big candy corn lover. The weather is also perfect. It's just cool enough to pull out my favorite pair of boots and a sweater but not painfully cold! It's overall just a great season. Here are some more reasons for everyone to get in the autumn mood.

  • Thanksgiving
  • Getting to see family a lot more (especially with my brother in college)
  • Bonfires
  • S'mores
  • Peppermint hot coco (w/ a candy cane stirrer of course)
  • Sweaters
  • Leggings
  • Boots
  • UGGS!!! I mean who isn't excited for furry boot weather??
  • Everything Pumpkin
  • Christmas cookies (eventually)
  • Nana's apple pie- the best one you will ever eat
  • Golf cart rides with blankets & Nutella hot chocolate w/ one of my best friends
  • My cousin Ryan's wedding!
  • Pomegranates (we have a plant in the backyard- it's a winter fruit)
  • Cooler running weather
  • Sweet & sugary fall inspired candles
  • Over sized everything- tshirts (long sleeve), sweaters, flannels
  • Fuzzy socks (it's not like I already wear them every day…)
  • Warmer and darker colors
  • Soups
  • Fireplaces
  • Basketball (the best sport of all time)
Well I could go on and on and on but I have to end it somewhere. Honestly, the fall just brings back so many memories from when I grew up in Nashville with my neighbors and all of the fun times we had. Most of them were more in the winter but I just remember the snow days with snow ice cream and the cold nights running back and forth from our houses, or the cold days hiding out in the basement watching movies with hot chocolate. I just love and miss all of them...

Today when I was at school I was so happy... which usually doesn't happen. I practically tackled everyone I passed by walking into school yelling "IT'S THE FIRST DAY OF FALL!!" I've just been so happy and overjoyed all day. Plus my parents are out at a meeting so I get to go make dinner... Which I should be starting to make right now because I have to defrost the chicken. I have a post coming up about a smoothie bowl I recently made.

So I just finished cooking dinner- I decided to make a fall inspired dish to kick off the beautiful season... I had to work with what I had though. I would have loved to used ripe figs and or persimmons but unfortunately we didn't have any of those. Instead I whipped up (in 2 hours)
 Balsamic Baked Chicken Breasts on a bed of Sauteed Spinach w/ a Maple Spicy Mustard Glazed Roasted Acorn Squash (half) topped with a Crushed Pecan and Parm Topping
I added a few yellow cherry tomatoes- my favorite- for some more fallish colors!!

Well that's my night... Enjoy fall! (and the beautiful weather right now)
