Stewed Okras and Tomatoes w/ Sausage over Rice

Hey! Sorry I haven't posted for a long time, sometimes I'm about to and then I get wrapped up in netflix (my new addiction, I don't remember the last time I watched regular TV- actually I do.. Pioneer Woman on Monday! ) ️but I totally forget. Anyways, my family and I are in my favorite city, for those of you who don't my blog my favorite city is New Orleans (NOLA post coming soon), and I have TONS of recipes I need to post. I thought I'd start with a fairly recent one from the other night! My parents were out ALL last week, every night, every day doing a whole bunch of photo shoots and business for my dad! That left me in charge of dinner for my brothers and whoever happened to be at my house that night. I was excited to cook though, I haven't cooked dinner in forever! This was definitely yummy though! (made enough for about 4 people) season everything with salt and pepper as you go..

Stewed Okra & Tomatoes w/ Sausage 
  1 1/2 cups frozen chopped okra
  about 1/4 cup tomato paste
  half big can diced tomatoes 
  1 1/2 thin spicy sausage links (chopped) 
  2 bay leafs
  oregano, salt, pepper
  1/2 sweet onion (diced)
  2 cloves garlic
  dried basil
  1/3 cup chicken stock 

Boil the okra according to the bag until the okra is slightly undercooked. Drain and set aside. Cook the sausage until it has a light brown crust. Absorb excess oil from sausage (leave the grease in pan) and set aside. Cook the onions and garlic in sausage oil on medium until soft and fragrant. Add the okra back in, chicken stock, & bay leafs and cook for about 3 minutes on medium. Add the tomato paste, diced tomatoes, and the rest of spices. Cook and add more paste or chicken stock for consistancy or spices as you go, until fully heated and at a low boil. Add the sausage and stir in.

Rice (my basic rice recipe) 
  2 cups white/wheat long grain rice
  2 cups chicken stock
  2 cups water
  2 bay leafs 
  1 tbs butter
  salt & pepper

Put everything in a pot and bring to a boil. Turn on low, cover, and cook for 20 minutes. Use a fork to fluff rice.

Pour the stewed okra & tomatoes over the rice to serve.
