Hey!! The other night for dinner my mom had swedish meatballs w/ egg noodles & sautéed kale. My mom made the meatballs and pasta and i made the kale. I can't remember the exact measurements... I keep forgetting to write them down as I go!! But it tasted really good, except i went a little heavy on the apple cidar vinegar...
1 lb fresh kale
about 1/2 cup apple cidar vinegar
1/2 sweet onion- diced
1 fresh jalepino- minced
4 pieces thick cut bacon- diced
1/4 cup toasted & chopped walnuts
about 10 dried apricots- diced
chicken stock (only if needed)
salt & pepper
REMEMBER TO ADD SALT AND PEPPER TO EACH LAYER OF FOOD YOU ADD. STARTING WITH THE BACON TO THE FINISHING TOUCH.
In a large sauté pan heat olive oil on medium until hot. Add bacon and cook until almost fully cooked. Add the onions and jalepinos. Cook until soft and add a little apple cidar vinegar. Cook down and add kale along with the rest of the apple cidar vinegar. Cook on med-low until all the kale is cooked down. Add chicken stock if needed for liquid. Add the apricots. Cook till all is warmed. Top with the walnuts. Finish with salt & pepper.
