Banana Bread/Muffins

Happy New Years! I can't believe this is 2014... It's going to take me a few weeks to get used to writing "2014" instead of "2013" on all my papers! Well I woke up this morning with a craving of muffins, so I walk to my kitchen and see 2 very over-ripe, but perfect bananas for banana bread. I pull out this one recipe for muffins that is to die for and start baking. I added my own twists to the batter, if you've been following me on this blogging journey, you know that I definitely HATE using recipes so I had to change it up in some way! I added vanilla extract and varied in the different spices. The recipe is from the cookbook "Better Homes and Gardens, Cookbook". It's just a basic muffin recipe with a streusel topping. I added in the bananas.

Banana Bread Recipe (tweaked)


1 3/4 c. flour
1/3 c. brown sugar
2 tsp. baking powder
dash salt
1/4 tsp. cinnamon
1 egg
1/4 c. canola oil
1/2 c. milk (i used 2%)
1/2 tsp. vanilla extract
2 over-ripe bananas (mashed)
chopped nuts (walnuts; optional)


Pre-heat oven to 400º.
 Mix the dry ingredients together. Mix the wet ingredients together, including the bananas. Pour the wet into the dry and mix until smooth. Pour into a greased cupcake pan, no liners. Top with streusel (recipe below) Bake for about 20 minutes, or until golden brown and cooked through. 



Streusel


3 tbs. flour
3 tbs. brown sugar
1/4 tsp. cinnamon
2 tbs. cold butter (cubed; small)


Mix together everything in a small bowl with fingers until the butter is mixed in and it looks like crumbs.
