So I'm kind of addicted to fried rice... I found this out 2 nights ago when i made a HUGE pot of it and I came back for a HUGE serving of seconds after my first plate piling with fried rice. And then I had a HUGE serving for lunch the next day.. I think I ate more than both my brothers combined😳 so here's the recipe to my fried rice... I'm actually kind of craving it right now!
2 1/2 cups long grain white rice (for a lot!)
5 cups water
salt and olive oil
ham (cubed) -any kind you want
1 sweet onion- diced
1 can sweet peas (drained)
roughly chopped carrots- small
roughly chopped celery- small
soy sauce & maggi sauce
rice wine vinegar
salt & pepper
minced jalapeños (optional)
1 tbs. dark brown sugar
(add as much veggies and ham as you wish!)
Bring the rice, water, salt, and oilve oil to a boil. Turn on low, put a lid on the pot, and cook for 20 minutes. Fluff up rice when done.
Saute the ham in a little oil. Transfer it into a bowl. Saute the onion, corn, carrots, and celery in the same pan with a tbs. rice wine vinegar, soy sauce, and the leftovers of the oil... plus salt an pepper. Add the jalapeño and brown sugar. Saute until soft. Add the peas. Cook until warmed. Transfer into another bowl. Crack 4 eggs into the pan and scramble them. Season. Add them in the bowl with the ham. Move rice into the pan- saute to get lightly colored. Add the veggies and ham and egg into the rice. Pour a little but more soy sauce into it. Serve with maggi sauce!
