Make your Own Frittata!

Hey! Yesterday for breakfast, I made a tomato and onion frittata. It was delicious and it was so easy to make! I haven't made one in forever and I was so happy with the outcome. We have tons of fresh tomatoes from the farmers market and we've been trying to use them in unique ways. Here's what I did:

1 big tomato
1/4 sweet onion, diced
3-4 eggs (i used 3 but use 4 for more of an eggy frittata)
1 tbs. EVOO
salt & pepper to taste
1/4 cup shredded mozzarella
1/2 tsp. dried oregano
1/2 tsp. dried basil

Mix the eggs, a little salt and pepper, basil, and oregano together with a FORK! Do not use a whisk, or it will get foamed not aerated. Always season layers, especially eggs. Put salt and pepper in every layer of frittata you make starting with the egg mixture to "finishing salt". Start sweating your onions in a small pan with oil and salt and pepper. Add the tomatoes when the onions are partially cooked. After that is warmed through, add the eggs, season, and move the pan around to create a nice even layer. Let it sit and cook on medium to medium-low. After the bottom half is cooked through sprinkle the cheese and season again, broil it in the oven till the cheese is melted and the egg is cooked through. When you are broiling make sure you leave the oven door cracked so you can watch it closely and make sure it doesn't burn.
Cut into quarters and top with a little seasoning and enjoy.

You can create many different versions of frittatas! You can add mushrooms, tomatoes, peppers, onion, bacon, ham, salmon, herbs, capers, and a huge variety of cheeses, so create your own!
