Herbed Incrusted Potatoes

6 small red potatoes or 2 large sweet potatoes (peel the sweet)
drizzles of olive oil
salt
pepper
paprika or any other seasoning you like
1/4 cup dried parsley

Preheat oven to roast on 425º

Slice the potatoes into any size you want just make sure they are all the same size.
 Mix in all the herbs and seasonings until each potato wedge is incrusted with it. Place on a baking sheet and roast for 15 minutes- flip and roast for 5 more minutes.
