Jicima Slaw

Hey sorry I have been gone! Ive been really busy over the summer and i just made this for dinner tonight so I thought I would post it:

1/2 jicima - peeled and thinly sliced (julienne)
2 limes- juiced
1/4 cup white wine vinegar
2 tbs. honey
pinch cinnamon and cayenne pepper
1/4 tsp. ground cumin
1/4 cup olive oil
1 apple- peeled and thinly sliced (julienne)
1 carrot- peeled into shreds for slaw

Put everything in a bowl and mix!!! Garnish with fresh cilantro!
