Wheat Apple Pancakes

1 1/2 cups wheat flour
1 tbs. baking powder
3 tbs. sugar
1 yellow delicious apple- peeled and thinly sliced
1 1/4 cup almond milk
1 tsp. almond extract
1 tsp. cinnamon
1/2 tsp. nutmeg
2 eggs- room temp
3 tbs. butter- melted and cooled

Mix the flour, sugar, cinnamon, nutmeg, and baking powder in a large bowl. If your eggs aren't room temp heres a trick: Fill a small bowl with luke warm water, just enough to bring the eggs to room temp not enough to cook the eggs, and then place the eggs in the bowl for about 5 minutes. In a small bowl mix the milk, almond extract, eggs, and butter together until smooth. Slowly whisk in the liquids into the solids. Mix until smooth and no more. Grease a pan or griddle. Let it heat up on medium heat. Place a few pieces of the apple on the griddle and pour 1/3 cup of the batter over it. Flip once the pancake sets and its bubbling. Let cook on the other side until done. Let cool and top with Brown Sugar Syrup:

Brown Sugar Syrup:
1/4 cup brown sugar- tightly packed
1/4 cup almond milk
1 tbs. butter

Over low heat melt the butter and sugar until dissolved in a very small pan. Add the milk and stir. Heat up until slightly thickened. Serve over Wheat Apple Pancakes! ENJOY!!!!!!
