Roasted Zucchini & Tomato Salad

 This was definitely one of my favorites- it was also so simple!!!

IN:
1 long zucchini
1 cup cherry tomatoes
1/4 cup chopped green onions
1 tsp. salt
1 tsp. pepper
2 tbs. olive oil
2 tbs. lemon juice
1 tbs. red wine vinegar

How: Pre-heat oven to 425º (roast)...
Quarter the zucchini and halve the tomatoes. Toss with olive oil and place in a roasting pan. Place in oven for 15 minutes or until they have a nice crust on them and they are soft and tender. Let cool and then toss with the onion. Pour the lemon juice and red wine vinegar right on top. Season with salt and pepper. Done!!
