Garlic-Herbed Salmon w/ Cucumber Creme Fraiche

This was one of the other delicious components to my meal last night!

Salmon:
5 filets of salmon- frozen or fresh- skin on
1 tbs. olive oil
about 2 tsp. salt
about 2 tsp. pepper
1 lime- juice
2 tsp. chopped fresh basil
3 cloves garlic- smashed and halved
1/2 tsp. dried dill

How: In a marinating bowl pour the olive oil and lime juice over the salmon evenly. Season with salt, dill, pepper and basil. Throw in the garlic and cover with parchment paper. Place in the fridge for up to 10 minutes. If any more it will fall apart. Heat a skillet on medium high and place the fish in skin-side up. Flip when the fish becomes pale in color and doesn't stick usually after 1-3 minutes... varies on the skillet. Let sit on the other side for about 30 seconds and take off. Let sit. Top with cucumber Creme Fraiche:

1 cup sour cream
1/2 cup heavy whipping cream
pinch salt to taste
pinch pepper to taste
1 small cucumber

Dice the cucumbers and place the cream, sour cream, salt, and pepper in the mixer. Whip until thick, smooth, and creamy. Fold in the cucumber and whip for a few seconds. Pour into a bowl and refrigerate until ready to use. Enjoy!!!
