Bacon Wrapped Cheese Stuffed Jalapeños

These are delicious and easy... they aren't very spicy and they are great for parties!!!!!!

7 medium sized jalapeños- red or green
14 strips thick cut bacon- raw
5 oz goat cheese- room temp and 4 oz cream cheese- room temp.
1/4 cup balsamic vinegar
3 tbs. olive oil
pinch salt and pepper
1 tsp. paprika
1/2 tsp. cumin seed
1/4 tsp. Park Hill Maple & Spice Pepper- if don't have use chipotle chili pepper because it is almost similar but the chipotle is a little spicier

How: Pre-heat the oven to 375º
Halve the peppers right down long ways. Scoop the seeds out and set aside.
Make the filling: Whip the cheese with all the spices and oils and vinegars until soft and fluffy.
Fill up the peppers with as much filling as you can and set the extra filling aside.
Wrap the peppers in baking and set in a greased baking dish. Bake for 15-20 minutes and its crispy and the bacon is fully cooked. Let cool and dip in the Sour Cream Dipping Sauce:

Use the leftover filling for this. Add to the filling 1/2 cup sour cream. Add 1/4 cup more balsamic and 2 limes- juiced and zest. Stir until all is combined and smooth. Set aside until peppers are ready and dip! ENJOY!!!
