Warm Vegetable Soup w/ Collard Green Chips and Parmesan Crisps

Hey!!!! So tonight for dinner I made Warm Vegetable Soup w/ Collard Green Chips and Parmesan Crisps. It was hearty, flavorful, filling, and warm. It had lots of different textures like crunchy, creamy, crispy, and velvety.

Soup:
half sweet potato- peeled
half butternut squash-peeled
4 beets-peeled
1 cup baby carrots
1 can tomato sauce
2 cups chicken stock
1 tsp. dill
dash ground cumin seed
half sweet onion-diced
half shallot-minced
2 garlic cloves-minced
3 tbs. olive oil


How:
In a pot on high heat, cook your garlic, onion, and shallot until soft. Add all your vegetables in and your chicken stock and tomato sauce. Add all your seasonings and stir. Cover and cook on medium heat for 30-45 minutes. Blend and put back in the pot. Turn on simmer and let it heat up.

Parmesan Crisp:
1 cup grated parmesan cheese

How: Pre-heat oven on 425º...
In a baking sheet line it with parchment paper. Grease it. Sprinkle a handful of parmesan cheese into piles and press down to make stiff rounds. Cook for 5-8 minutes. Let cool for 10 minutes and pop out of parchment paper.


Collard Green Chip:
half a bundle of collard greens- the leaves
3 cloves garlic- smashed, peeled, and minced
2 tbs. olive oil
salt and pepper

How: Pre-heat oven to 425º...
Grease a baking pan. Place your collard greens on it and add everything else in it. Mix around and cook for 10 minutes.



Prepare It:
Chopped chives
sour cream
soup
parmesan crisp
collard green chip

Ladle some soup into a bowl and add a dollop of sour cream. Place some chips and a crisp in the sour cream. Sprinkle some chives on top. ENJOY!!!!!
