Roasted Chicken- Recipe of the Day

Hey!! I made this for dinner a couple nights ago and it was delicious... I wanted to right it on my blog before I forgot so here it goes. P.S. - I just kind of experimented with it and did my research online and all so here it is:

Roasted Chicken:
1 whole chicken- if forgot what the weight was
1/4 cup rosemary sprigs
1 lemon- juice and zest
1 tsp. salt
1 tsp. pepper
1 tbs. olive oil
1 tsp. smoked paprika
1 tsp. dried thyme
4 bay leafs

HOW: Preheat the oven to 375º.
First I washed my hands and the chicken, then I stuffed the skin of it with a few rosemary sprigs. Wash your hands many many times during the process- every time you touch it... wash your hands. Drizzle the olive oil over it and rub. Juice the lemon over it and add the lemon zest. Sprinkle the thyme, rosemary, paprika, salt, and pepper over it. Rub. Cut a few ends off the lemon and place around the chicken and in the skin. Stick the bay leafs in various places in the chicken for flavor. Place in a baking pan and cook for 30 minutes- cover with tin-foil and cook for 30 more minutes. Let cool for 15 minutes and carve.  While it's cooking I made a side dish-

Roasted Potatoes:
4 medium sized potatoes
2 tbs. rosemary sprigs
pinch salt
pinch pepper
1 shallot
1 tbs. olive oil

HOW: Set oven to 375º
Scrub and clean the potatoes. KEEP THE SKIN ON. Cut into wedges/cubes. Put in a baking pan and drizzle with olive oil, salt, pepper, and rosemary. Mince your shallots and sprinkle on top. Mix all together. Cook for 15 minutes and mix. Cook for another 20 minutes and let cool. ENJOY!!!!
