My Version of an "Egg Roll"

This recipe is so simple and delicious for a quick healthy breakfast.     Serves: 1

IN:
1 large egg
2 tsp. EVOO
pinch salt
pinch pepper
pat of un-salted butter
1/4 cup shredded smoked cheddar cheese
3 cherry tomatoes- washed

HOW: In a skillet put your better in and melt on medium heat. Once heated, crack open your egg and place it in the pan. Cook for 2 minutes. Gently sprinkle the cheese on top of the egg. Slowly roll over your egg into a little egg roll shape. Cook for another minute. Take off heat and put it on a plate or platter. Drizzle with olive oil and sprinkle with salt and pepper. Half your tomatoes and place them right on top. ENJOY!!!
