My Favorite Side Dish

Roasted Vegetables
Hey! Whenever I make dinner or eat dinner I always want roasted vegetables! They are so yummy and healthy, too. My favorite part about them is that you can take any vegetable on earth and roast them. Squash, zucchini, carrots, any type of peppers, any type of potatoes, turnips, parsnips, greens, and lots more. Last night I made squash, sweet potatoes, russet potatoes, and red bell peppers. It was so colorful with the yellow, orange, white, and red! Whenever I do roasted veggies, this is my recipe:

All the roasted veggies you want- in this case squash, bell pepper, sweet and russet potatoes
1 tbs. fresh rosemary sprigs or 2 tsp. dried rosemary
pinch salt and pepper
drizzle- about 2 tbs.- EVOO (extra virgin olive oil)


How: Put oven on 425º F.
Cut up veggies in cubes that are all about the same size or julienne strips. Place on a baking sheet. Add all the spices and EVOO to it. Mix. Cook for 20 minutes, toss, and then 20 more. Enjoy!!!
