Gooey Strawberry Cupcakes

I am going to start something called a "Recipe Of The Week" so every Sunday I will post a new recipe that I have made. You can comment on my blog to tell me to try to create new recipes you would like.  This is this Sunday's:

This is my best cupcake EVER!!! I make cupcakes and muffins non-stop because they are my favorite! This one is so good and it's almost like a strawberry upside-down cupcake because most of the strawberries float to the bottom. It's my regular cupcake base. Here's how:

IN:
1 1/2  cups flour
3 eggs
1 stick butter (1/2 cup) room temp.
1/2 cup granulated sugar
1 tsp. baking powder
1/2 tsp. vanilla
1/2 cup vegetable oil
1/4 cup water
1 tbs. honey
1 cup fresh strawberries- washed

HOW: Put oven on 350º
Cream the butter and sugar together until smooth and rich.  Scrape the sides occasionally. Add the eggs  and vanilla to the mixture. Beat until combined. Gradually add the flour a half cup at a time. Add the baking powder.Add the oil and water in. Mix on low while you cut up the strawberries in to small cubes. The less you mix, the more fluffier it will get. Fold in the strawberries. Add the honey and mix for 10 quick seconds to combine the honey in. Use cupcake liners or grease a cupcake pan for 12 cupcakes. Use 1 ice-cream scoop size of batter in each one. Sprinkle a little sugar on top of each one and bake in the oven for 20 minutes or until lightly golden-brown on top. It will continue cooking outside of the oven. Take immediately from the pan to let cool. ENJOY!!!!!!!
