Best Dinner EVER!!!

HEY!! For dinner tonight I made homemade turkey meatloaf, mixed mashed potatoes, wilted lemon spinach, boiled squash, and buttery toast. My mom made the spinach and the toast. She helped me with the squash because her mom has a great recipe for it. Here it is:

Meatloaf:
1 egg- lightly beaten
1/2 cup breadcrumbs- I made mine homemade but you can buy them
3 pounds ground turkey- thawed out if it is frozen
salt and pepper for taste
1 medium shallot- minced
1/2 sweet onion- diced
2 cloves garlic- minced
1/4 cup canned green chilies
1/4 cup parmesan reggiano - grated
1/2 cup chicken stock
1 tbs. worcestershire sauce
1 tbs. olive oil

How: Heat oven on 350º.
Heat a pan with the olive oil and add the chilies, garlic, onion, and shallots. Mix it all together and let cook on medium for 1 minute. Add the chicken stock, salt, pepper, and worcestershire sauce to it. Stir and cook until softened. In a big bowl add the turkey, cheese, breadcrumbs, egg, onion mixture from the pan, and 2 - 3 big spoonfuls of the tomato sauce underneath this. Mix all together with your CLEAN hands. Don't mix too much or else it will be tough and not moist. Grease a 8x5 loaf pan and fill your meat up to the top of it. Pat it smooth and layer the sauce on top. Sprinkle some dried basil on top. Cook for 1 hour 15 minutes. Take out and let rest. ENJOY!!

Tomato Sauce:
12 oz tomato paste
1 tbs. worcestershire sauce
pinch salt and pepper
1 tbs. olive oil

Mix together in a small bowl.


Mixed mashed Potatoes:
2 big sweet potatoes- peeled and cubed
3 small russet potatoes- peeled and cubed
salt and pepper for taste
2 tbs. dark brown sugar
1 tsp. nutmeg
1 tsp. cinnamon
1/4 stick butter
1/4 cup low-fat milk

How: Boil water in a big pot. Add the potatoes and cook on medium- low for about 20 minutes or until they are soft. Drain from water and put back in the pot. On a low simmer add the salt, pepper, cinnamon, nutmeg, brown sugar, and butter. Mix with a electric hand mixer until smooth. Add the milk in. Mix until silky. Enjoy!!



For the squash just cut up 2 of them into moons and in a pot with a little water- just enough to cover the squash. Bring to a boil and turn on simmer. Add one tbs. sugar, salt and pepper. Cook until soft. Enjoy!

This sounds so yummy - good comfort food! Have you done the cauliflower mash instead of potatoes? It is SO GOOD and I swear as good as potatoes but healthier. As an option sometimes!

I was about to do that!! I just wanted some mashed potatoes that night!! Thanks!! I will make a cauliflower mash soon and post the recipe if I like it!!
